A saucepan can be hot while the centre of its food is still cool. Cooking transfers energy, but it takes time for that energy to reach every part.
Three mechanisms help explain the journey: contact within and between materials, movement of hot liquid or air, and radiation from a heat source. Most cooking combines them. A heat setting describes the equipment; it does not measure the food’s centre.
